As part of Blogtober, the month when bloggers brave enough to sign up for posting once a day all month, I thought I’d add in a few warming recipes. If your household is as busy as mine, you have nights where you need something quick and easy to prepare. This hearty soup was my mother’s recipe, and I’ve tweaked it a little over the years to the recipe I’m sharing with you now.
1 medium onion, diced
3-4 cloves garlic, diced
2 tbsp olive oil
4 stalks celery, diced
4 large carrots, sliced into medallions
8 cups vegetable or chicken broth
1 tsp thyme
1 small package tortellini
Parmesan for topping
Sauté onion and garlic in oil until onions are translucent. Add celery, sauté for 3 more minutes. Add broth, bring to a boil.
Add carrots to boiling broth and cook 10 minutes. Add tortellini, cook according to recommended cooking directions on package (it will take longer if frozen). Add thyme in last 2 minutes of cooking. Serve with parmesan cheese.

My kids love this soup, and it’s great left over for school lunches. If you want to make it extra hearty, and you’re not a vegetarian, you can add in some cubed chicken. If you know you’re going to have a busy day, you can prepare the vegetables the night before, and the next day, presto! Everything is ready for a warm, filling meal.
